This vegetable pizza recipe makes a perfect, delicious meal for any night of the week, but especially a night when you want to stay in, stay warm and watch a movie with your family.
Preheat oven to 450-500 degrees (or according to your pizza dough directions).
Melt butter in skillet over medium-high heat. Add thinly sliced onions and cook until caramelized, about 12-15 minutes.
Stir the paprika into the caramelized onions, take off heat and let cool.
Spread a thin layer of marinara pizza sauce over prepared dough.
Sprinkle provolone over sauce. Layer with caramelized onions, thinly sliced sweet potato, rosemary and additional cheese. Keep layers thin!
Finish the pizza off with a dash of Kosher salt and a generous sprinkling of Parmesan cheese.
Bake until golden brown, about 7-8 minutes (baking time could vary depending on your pizza dough).
